Princeton’s newest restaurant, Kathy’s, was not something that came about as the result of a long-term plan, but rather due to happenstance.

“It kind of just happened and fell into our lap. We started out Sept. 1 serving hot dogs and barbeques and, within a few weeks, we expanded into a full restaurant with three dining rooms,” co-owner Kathy Wolfe said Tuesday.

In addition to hot dogs and barbeques, Wolfe said the restaurant serves salads, French fries, hamburgers, steak sandwiches, chicken salads and croissants.

“Within a week, we hope to start serving breakfast,” she added

Wolfe, who owns the restaurant with her husband, Harold, said, “I have never done anything like food service in my life, but I love it and the people I’ve met. It’s fun and the best job I’ve ever had.”

The business is located on Ingleside Road, just up from CVS. It employs three people. The hours are 10:30 a.m.-5 p.m. currently, but will expand to 6:30 a.m. when breakfast starts being served.

“We will stay open as long as people are eating. We do deliveries,” she said.
