MCHD is now operating on the 2013 USDA Food Code, as such, the following describes the designations below. Priority items are hazards associated with food-borne illnesses or injury such as: cooking, heating, reheating, cooling or hand washing. Foundation items are situations that would lead to a priority issue such as training, equipment, documentation, or labeling. Core items are related to sanitation, procedures, equipment design, and general maintenance. Three or more priority violations that cannot be corrected immediately, or one issue deemed a health hazard can result in an establishment having their permit suspended.
